Vinification and aging: Fermentation takes place partly in oak tonneaux and partly in steel, spontaneously and in contact with its skins. These macerations last from twenty to thirty days. Maturation on the lees with weekly batonnages for a few months in steel tanks. Finally, it is bottled without undergoing invasive manipulations such as clarification or filtration with the addition of a very small amount of sulphites. A further phase of refinement in the bottle follows before being marketed.
