Vinification and aging: Fermentation at controlled temperature for 15 days. Post fermentation maceration on the skins for a further 30 days. Maturation in tonneaux with weekly "batonnage", thus allowing the lysis of the yeast to start over time, giving complexity and longevity to the wine. Further maturation of 6 months in steel in contact with the yeasts. Coarse filtrations, so as not to lean the product. Refinement in the bottle.
