The name “Phonsano” chosen for this very interesting Sagrantino bases its story in a small anecdote. Years ago Ilaria’s father, during a research on the origin of their surname, discovered on ancient maps that the source, which is still located at the foot of the Sagrantino vineyard, is called Phonsano and has been owned by the Cocco family since 1650.

Wine Tips
The Sagrantino grape has the characteristic of containing in its thick skin a quantity of tannins that are among the most important in the world, so as to make this vine particularly suitable for the production of wines for aging. Furthermore, Sagrantino is a grape that lends itself to drying to give sweet wines and Sagrantino was born just like that, in a passito version mainly used in liturgical functions, hence, its name Sagrantino is said, connected to a dimension, precisely, sacral.
On the other hand, the production of Sagrantino in a dry version, which dates back to the early seventies, is younger. The love affair of this version finds its home in the combination with the typical dishes of the Umbrian tradition, characterized by an important structure and naive simplicity. An example above all is the stewed wild boar stew or the famous “Piccione alla Folignate”.
